WHere is a simplified interpretation of a drink found on the seasonal drinks list. It's a party-sized prepared mix which is packed with tastes of the Christmas time, which makes it ideal for a festive gathering. Any leftover syrup to use in breakfast cocktails, sweets, or to make additional servings of bikinis.

Serves 10 guests
Ingredients for the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Cocktail (makes 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Cordial: Place every items inside a pot, bring to a gentle boil, agitating so the sugar melts. Then, take off the heat allowing it to cool completely. Pour into an sealable bottle, seal and refrigerate it in the fridge, it will last for up to a month.
To make Premix: Combine every liquid ingredients into a big jug, leave to sit for an hour, then filter it , ideally through a fine cloth, to ensure it's fully clarified.
To serve: Pour 85ml of the premix into your mixing glass filled with ice, gently stirring gently for one minute to chill. Strain to a cold coupe glass or a similar vessel, garnish with the cranberries and finish using a quick spritz with the mandarin essence over the drink.
